Zesty Vegetable Salad

1 Tbsp extra virgin olive oil, for cooking
3 Green Giant™ Fresh Bell Peppers, sliced
8 Green Giant™ Fresh Asparagus Spears, chopped
1 pkg artichoke hearts
1/3 cup Green Giant™ Fresh basil, chopped
1 tsp Green Giant™ Fresh rosemary, finely chopped
Salt and pepper to taste
1 large head Romaine lettuce, torn
1 pkg (3 oz) sun dried tomatoes
1 Green Giant™ Fresh Avocado, sliced (optional)

Zesty Lemon Dressing
Juice from one lemon
3 cloves garlic, finely chopped
1/2 cup extra virgin olive oil
1 tsp salt


  1. Coat bottom of a medium pan with olive oil, bring to medium-high heat. Toss in bell peppers, asparagus, artichoke hearts, basil, rosemary, salt, and pepper. Cook for 10 minutes or until vegetables are tender.
  2. While vegetables are cooking, prepare dressing and lettuce. Place lemon juice and garlic in a small bowl. Whisk in olive oil and add the salt. Run lettuce under cool water, chop into bite-sized pieces and place in large serving bowl. Once vegetables are done, place on top of lettuce and pour dressing over the top. Place avocado and sun dried tomatoes on top and serve.
