Thai Turkey Lettuce Wraps

1 1/4 lb ground turkey
1/4 cup Green Giant™ Fresh Green Onions, chopped
3 Tbsp Green Giant™ Fresh cilantro, chopped
1 Tbsp Green Giant™ Fresh mint, chopped
2 Tbsp fresh lime juice
2 Tbsp fish sauce
3 Tbsp creamy peanut butter
2 tsp garlic and red chili paste
1 tsp sugar
1/2 tsp crushed red pepper flakes
1 cup carrots, shredded
1/3 cup salted peanuts, chopped
12 Green Giant™ Fresh Little Gem Lettuce leaves, rinsed, patted dry with paper towel


  1. In 10” nonstick skillet, cook turkey over medium-high heat, stirring frequently, until thoroughly cooked; drain and return to skillet. Stir in green onions, cilantro, mint, lime juice, fish sauce, peanut butter, chili paste, sugar and red pepper flakes. Cook 3-4 minutes longer or until hot.
  2. To serve, spoon 2 heaping Tbsp turkey mixture, 2 Tbsp carrots and 1 tsp peanuts onto each lettuce leaf; wrap around filling. Serve warm.
