Thai Chili Chicken Skewers

2 cups boneless, skinless chicken breasts, cooked & cubed
2 Green Giant™ Fresh Mini Cucumbers
1 Green Giant™ Fresh Red Bell Pepper
1 cup Green Giant™ Fresh Sugar Snap Peas
1 1/2 cups Green Giant™ Fresh Sliced Mushrooms
2 large Green Giant™ Fresh Carrots
2 Tbsp Green Giant™ Fresh cilantro, chopped
2 Tbsp chopped almonds, toasted

3/4 cup real mayonnaise
2 Tbsp sweet chili sauce 
1/2 Tbsp seasoned rice vinegar
5 tsp water
2 tsp chili pepper, seeded & minced
1/4 tsp fresh ginger, finely grated
1/2 tsp soy sauce


  1. Combine all dressing ingredients in a small mixing bowl and whisk until combined, set aside in refrigerator.
  2. Slice cucumbers into 1/2″ coins. Slice bell pepper into bite-size pieces. Slice the larger sugar snap peas in half width-wise. Peel and slice carrots into thin ribbons, using a vegetable peeler or mandolin slicer.
  3. Alternately thread the vegetables and cubed chicken onto wooden skewers.
  4. Before serving, drizzle with dressing and sprinkle with cilantro and almonds. Serve with additional dressing.
