Sweet Potato & Cauliflower Tots

1 bag (16 oz) Green Giant™ Fresh Sweet Potato & Cauliflower Crumbles® chopped vegetables
1 1/2 tsp coarse salt (Kosher)
1/3 cup all-purpose flour
1 Tbsp cornstarch
1 cup panko breadcrumbs
1 egg
Vegetable oil or shortening


  1. Prepare Sweet Potato & Cauliflower Crumbles®  chopped vegetables as directed on package.
  2. In medium bowl, mash cooked sweet potato and cauliflower and salt with potato masher or fork until well blended (doesn’t have to be smooth). Shape 24 heaping Tbsp of sweet potato cauliflower mixture into tot shape. Place on work surface.
  3. Meanwhile, in separate shallow dishes place flour and cornstarch in one and panko in the other. In small bowl, beat egg with fork or whisk. Coat tots with flour mixture; dip tot in egg, then in panko coating all sides.
  4. In 2-quart saucepan, heat 2” of oil over medium heat to 350°F. Fry 4 tots at a time in oil 1-2 minutes or until lightly browned. Remove with slotted spatula; drain on paper towels. Repeat with remaining tots.
