Spaghetti Squash Pancake

1 bag (16 oz) Green Giant™ Fresh Spaghetti Squash
1/2 cup all-purpose flour
1/4 cup Parmesan cheese, grated
2 eggs
3 Tbsp Green Giant™ Fresh Green Onions (about 3 onions), finely chopped
1/2 tsp salt
2 Tbsp olive oil


  1. Prepare spaghetti squash as directed on package.
  2. In medium bowl, place cooked squash. With fork, smash against side of bowl, breaking squash into stringy fibers (spaghetti). Stir in flour, cheese, eggs, green onions and salt.
  3. In 12” nonstick skillet, heat oil on medium heat for 1 minute. Spoon about 3 Tbsp squash mixture into pan, flatten to about 2”. Repeat with remaining squash mixture. Cook 3-4 minutes, turning once or until golden brown. Drain on paper towels. Serve immediately.
