Parsley Smashed Potatoes

4 medium unpeeled Green Giant™ Fresh Potatoes, cut into 1” pieces
6 cloves garlic, peeled
1/3 cup Green Giant™ Fresh Italian (flat-leaf) or Green Giant™ Fresh curly-leaf parsley, chopped
1/2 tsp salt
Pepper, if desired
1/4 cup fat-free sour cream


  1. In 3-quart saucepan, place potatoes and garlic; add enough water to cover. Heat to boiling; reduce heat. Cover; simmer 15-20 minutes or until potatoes are tender. Drain, reserving cooking liquid.
  2. In saucepan, mash potatoes, garlic, parsley, salt and pepper with potato masher just until lumpy. Gradually add about 1/4 cup cooking liquid, mashing until combined but still lumpy. Stir in sour cream.
