Oat Chocolate Chip Cauliflower Cookies

1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/3 cup packed brown sugar
1 egg
1 tsp vanilla
1 1/2 cups Green Giant™ Fresh Cauliflower Crumbles® chopped cauliflower
1 1/2 cups all-purpose flour
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
2 cups (12 oz) semisweet chocolate chips
1 cup quick-cooking oats


  1. Heat oven to 350°F. Line cookie sheets with cooking parchment paper. In large bowl, mix butter, sugars, egg and vanilla with electric mixer on medium speed until light and fluffy. Stir in cauliflower, flour, cinnamon, baking soda and salt (dough will be stiff). Stir in chocolate chips and oatmeal.
  2. On cookie sheets, drop dough by 2 Tbsp portions about 2” apart.
  3. Bake 15-18 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheets to cooling rack.
