Gems with Prosciutto & Compote

  • Servings: 6 (1 head lettuce and 1/3 cup compote each)


Orange Compote
1 tsp olive oil
1 serrano chile, seeded, stem removed, minced
2 1/2 cups orange segments, diced
1/2 cup sugar
1/4 tsp red pepper flakes
1/2 cup lemon juice
1/2 cup orange juice

2 tsp olive oil
1 package Green Giant™ Fresh Little Gem Lettuce
12 thin slices prosciutto


  1. Make orange compote. Heat 1 tsp oil in medium skillet over medium-high heat. Add chile; cook 30 seconds. Stir in oranges; cook 2 minutes or until hot. Add sugar, red pepper flakes, lemon juice and orange juice. Cook and stir over medium-high heat 5-6 minutes or until compote is slightly thickened. Refrigerate compote until cool.
  2. Place compote in blender and blend until slightly chunky; add salt and pepper to taste. Set aside.
  3. Heat 2 tsp oil in medium skillet over medium heat. Cut each head of lettuce in half lengthwise. Place lettuce, cut side down, in skillet; cook about 2 minutes or until golden brown. Cool.
  4. To serve, wrap each lettuce half with prosciutto. Top with orange compote.
