Gems with Herbed Goat Cheese

1 package (4 oz) plain goat cheese (chevre)
1 Tbsp sundried tomatoes in oil, minced
1 Tbsp Green Giant™ Fresh parsley, chopped
1 package Green Giant™ Fresh Little Gem Lettuce
Toasted pine nuts, Optional
Smoked paprika, Optional


  1. Place cheese and sundried tomatoes in blender or mini food processor. Blend until mixture is smooth; stir in parsley. Set aside.
  2. Heat oven to broil. Cut each head of lettuce in half lengthwise. Spread cheese mixture on cut side of lettuce; place on baking sheet.
  3. Broil 1-2 minutes or until cheese is slightly bubbly. Top with pine nuts and paprika, if desired.
