Broccoli Pesto

1 package Green Giant™ Fresh Broccoli Florets
2 cups Green Giant™ Fresh basil leaves
1 clove garlic
Zest from 1 lemon
¾ cup olive oil
2 tsp. salt
¼ tsp. freshly ground pepper
½ cup parmesan
¼ cup pine nuts, optional
For dipping: carrots, cucumber, additional broccoli florets, green beans, crackers


  1. Steam the broccoli florets in the microwave for 6 minutes or until tender. Place in a strainer and run under cold water until cool. Pat dry with paper towels.
  2. Working in batches, pulse the cooked florets in the bowl of a food processor, scraping down the sides of the bowl as needed.
  3. Add the basil, garlic clove, and lemon zest to the food processor and blend. While the processor is running, gradually pour in the olive oil. Puree until smooth.
  4. Add the parmesan cheese and pine nuts (if using), and pulse until blended.
  5. Serve with veggies and crackers.
