Braised Gems with Bacon & Sherry

6 slices bacon
1 package Green Giant™ Fresh Little Gem Lettuce
3/4 cup dry sherry wine
1 cup vegetable broth
3 Tbsp red wine vinegar
2-3 tsp spicy mustard
2 Tbsp butter
1 Tbsp Green Giant™ Fresh parsley, chopped


  1. In a medium skillet, cook and stir bacon over medium-high heat about 5 minutes or until crisp; remove bacon. Drain all but 1 Tbsp of the fat.
  2. Cut each head of lettuce in half lengthwise. Place lettuce cut side down, in pan. Cook over high heat about 2 minutes or until lettuce is golden brown. Turn lettuce over; add sherry to pan. Cook 1 minute; remove lettuce from pan and set aside.
  3. Add vegetable broth, vinegar and mustard to pan. Cook over medium-high heat about 8 minutes or until mixture is reduced by half. Add butter; cook until melted. Add lettuce halves and bacon.
  4. Reduce heat to low; cover. Cook 5-6 minutes or until lettuce is tender. Top with parsley and salt and pepper to taste.
