Avocado Key Lime Mousse

1 ripe Green Giant™ Fresh Avocado, peeled, seed removed
1/2 cup key lime juice
1 can (14 oz) sweetened condensed milk (not evaporated)
1 1/4 cups heavy whipping cream
2 cups coarsely crushed graham crackers (1/2” pieces, about 8 crackers)



Avocado Key Lime Mousse
  1. In food processor, place avocado, lime juice and condensed milk. Cover and process until smooth. Transfer mixture to medium bowl. Cover and refrigerate 2 hours.
  2. In medium bowl, beat whipping cream with electric mixer on low speed until mixture begins to thicken. Gradually increase speed to high, and beat just until soft peaks form. Fold in chilled avocado mixture.
  3. In six 1/2 pint canning jars or other 8 oz straight-sided glasses, place 2 Tbsp cracker crumbs in bottom. Top with 1/4 cup avocado mixture and 1 Tbsp cracker crumbs; repeat. Top with final 1/4 cup avocado mixture, and sprinkle with remaining crumbs. Refrigerate 4 hours.
