Roasted Cauliflower Chowder

Ingredients

2 Tbsp olive oil
1/2 cup yellow onion, chopped (1 small)
3 cloves garlic, finely chopped
1 bag (16 oz) Green Giant™ Fresh Cauliflower Crumbles® chopped cauliflower
4 tsp all-purpose flour
4 cups half-and-half
1 pkg (7 oz) sweet white Cheddar cheese, shredded
1 tsp garlic salt
2 green onions, chopped

Directions

1. In 3-quart saucepan, heat oil over medium heat. Add onions and garlic and cook 2-3 minutes, stirring frequently. Stir in cauliflower and cook 10-12 minutes until cauliflower is tender and starting to brown. Add flour and cook an additional minute, stirring constantly.

2. Reduce heat to low and add half-and-half. Heat 10-15 minutes or until small bubbles begin to form around edge of pan. Remove from heat; stir in cheese and garlic salt.

3. With an immersion blender, blend chowder 1-2 minutes or until smooth.
Ladle chowder into individual bowls. Top each with green onion.
