Zucchini Prep 101

Zucchini is an oblong-shaped vegetable with a vibrant green color. It is a member of the gourd family and is related to squash and pumpkin. Zucchini can be eaten raw, baked, mashed, grilled and more.

Microwave: 

Washed and slice zucchini and place into a microwave-safe baking dish. Add three tablespoons of water and cover dish loosely. Microwave on high for 4-7 minutes or until fork tender.

Steamer: 

Slice zucchini or cut into cubes and place in steamer for 10-15 minutes or until tender-crisp.

Boil: 

After rinsing and peeling zucchini, cut into cubes or slice into discs. Place zucchini into a pot of boiling salted water. Reduce heat and cook uncovered for 5-10 minutes or until fork-tender.

Freezing: 

To freeze zucchini, wash and cut into cubes or slice into discs. Blanch 10 - 15 minutes. Remove from boiling water and immerse in ice water for same amount of time. Dry thoroughly and place into freezer bag.
