Yellow squash is a gourd vegetable with an oblong shape. Whether simmering in sauces or baked in casseroles, this delicious vegetable brings a rustic flavor to any dish.
Wash and slice yellow squash and place into a microwave-safe baking dish. Add three tablespoons of water and cover dish loosely. Microwave on high for 4-7 minutes or until fork tender.
After washing, slice yellow squash or cut into cubes and place in steamer for 10-15 minutes or until tender-crisp.
After washing and peeling yellow squash, cut into cubes or slice into discs. Place yellow squash into a pot of boiling salted water. Reduce heat and cook uncovered for 5-10 minutes or until fork-tender.
To freeze yellow squash, wash and cut into cubes or slice into discs. Blanch 10 - 15 minutes. Remove from boiling water and immerse in ice water for same amount of time. Dry thoroughly and place into freezer bag.
