Spinach


Although it will not produce the magical effects that Popeye enjoyed, spinach is most definitely good for you. It is exceptionally rich in carotenoids, including beta-carotene and lutein, and also contains quercetin, a phytochemical with antioxidant properties. Spinach is rich in vitamins and minerals, particularly folate (folic acid), vitamin K, magnesium, and manganese; it also contains more protein than most vegetables.

Care and Handling

Availability - Green Giant® Fresh Spinach is available year round.

Selection - Green Giant Fresh Spinach comes cleaned and prepackaged for your convenience. Your grocer should store bagged spinach in the refrigerated section and only display product that is within the use by date.

Storage - Leave packaged spinach in its bag, or pack it loosely in a plastic bag and store in the refrigerator crisper. Fresh spinach will keep for 3 - 4 days.

Preparation - Rinse spinach in lukewarm water just prior to use.

Cooking - Green Giant® Fresh Spinach is best eaten fresh as a salad but is also great sautéed in a little oil and your favorite seasonings. Pine nuts or sunflower seeds make a great addition to many spinach dishes.

Freezing - To freeze spinach, sort and remove wilted or undesirable leaves. Either leave whole or cut into 1 inch pieces. Blanch spinach for 1 ½ - 2 minutes. Immerse greens in cold water immediately after blanching. Drain, and place in airtight freezer bags.
