2 Tbsp olive oil
3 cloves garlic, finely chopped
1 bag Green Giant™ Fresh Southwest Vegetable Blend
1 can (15 oz) diced tomatoes
2 Tbsp tomato paste
1 can (4 oz) diced green chilies
1 Tbsp chili powder
1 tsp ground red pepper (cayenne)
3 cups chicken broth
1 can (15 oz) black beans, drained, rinsed
1 can (11 oz) Green Giant™ SteamCrisp™ Niblets™ Corn, drained
1 cup tortilla strips
1. In large saucepan, heat oil over medium heat. Add garlic; cook 1 to 2 minutes or until starting to brown. Stir in vegetable blend; continue cooking 2 minutes. Stir in remaining ingredients except tortilla strips; mix well. Heat to boiling; reduce heat. Simmer 5 minutes to blend flavors.
2. Ladle into bowls; top with tortilla strips.
