Spicy Shrimp Ceviche

    Ceviche
     
    1/2 cup finely chopped Green Giant™ Fresh Red Onion
    2 Green Giant™ Fresh Plum (Roma) Tomatoes, seeded, chopped
    1/2 cup finely chopped Green Giant™ Fresh Cilantro
    1 1/2 lb cooked deveined peeled medium shrimp, thawed if frozen, tail shells removed
    1 cup thinly sliced English (seedless) cucumber
    1 serrano chile, seeded, chopped
     
    Bloody Mary Marinade
     
    1 large Green Giant™ Fresh Avocado, pitted, peeled, sliced
    1/2 cup ketchup
    3/4 cup spicy Bloody Mary mix
    2 tablespoons lime juice

  • Directions

    1. In large bowl, gently toss ceviche ingredients until well blended.  
    2. In medium bowl, mix ketchup, Bloody Mary mix and lime juice with whisk. Pour over ceviche; cover and refrigerate 1 hour to blend flavors. 
    3. Spoon about 1/2 cup of shrimp mixture into tall cocktail glasses. Top with avocado slices.
