Southwest Salad

    Dressing
    1 ripe avocado, peeled, seed removed
    1 cup lightly packed fresh cilantro
    1/4 cup olive oil 1/4 cup water
    2 Tbsp fresh lime juice
    2 tsp garlic salt
    1/2 tsp pepper
    Salad
    1 bag Green Giant™ Fresh Southwestern Vegetable Blend
    1/2 cup Green Giant™ Niblets™ Frozen Corn, cooked, drained Topping
    1/2 cup cotija cheese, crumbled
    1/2 cup tortilla strips

  • Directions

    1. In food processor, place Dressing ingredients. Cover; process until smooth, scraping occasionally. Set aside.
    2. In large bowl, mix vegetable blend and corn. Toss with about 1/2 cup of the dressing, using more or less for your personal preference. Top with cheese and tortilla strips.
