Little Gem Lettuce Hearts with Arugula Pesto

    1 package (2 oz.) Green Giant™ Fresh Basil

    2 oz. fresh arugula

    1/4 cup shredded Parmesan cheese 

    3 cloves garlic, peeled 

    1/4 teaspoon salt 

    3/4 cup olive oil 

    1 package (6 count) Green Giant™ Fresh Little Gem Lettuce Hearts 

    1/2 cup chopped salted mixed nuts 

    1/4 cup shaved Asiago cheese

  • Directions

    1. In mini food processor or blender, place basil, arugula, Parmesan cheese, garlic, salt and 1/4 cup of the olive oil. Cover; process until smooth. Slowly add remaining 1/2 cup olive oil until well blended. 
    2. Cut each lettuce heart lengthwise into 4 sections. Place lettuce on serving plate; spoon pesto over lettuce. Top with nuts and Asiago cheese.
