1/4 cup finely chopped shallot (1 medium)
1/4 cup finely chopped fresh Italian (flat-leaf) parsley
2 Tbsp red wine vinegar
2 Tbsp extra-virgin olive oil
1 1/2 Tbsp lemon juice
1 Tbsp Italian seasoning
1 tsp sugar
3/4 tsp fresh ground pepper
1/2 tsp kosher salt
1/4 tsp crushed red pepper flakes
1 bag Green Giant™ Fresh Italian Vegetable Blend
1 can (15.5 oz) cannellini beans, drained, rinsed
6 oz Italian dry salami, diced
3 Tbsp grated Parmesan cheese
1. In small bowl, mix Dressing ingredients.
2. In large bowl, mix vegetable blend, beans and salami. Pour dressing over mixture; mix well. Sprinkle with cheese.
