Braised Gem Lettuce with Bacon and Wine

    1 package (6 count) Green Giant™ Fresh Little Gem lettuce hearts 

    1 tablespoon chopped Green Giant™ Fresh curly parsley 

    6 slices bacon

    3/4 cup dry sherry wine 

    1 cup vegetable broth 

    3 tablespoons red wine vinegar 

    2 to 3 teaspoons spicy mustard 

    2 tablespoons butter

  • Directions

    1. In 12" skillet, cook and stir bacon over medium high heat about 5 minutes or until crisp; remove bacon, chop and set aside. Drain all but 1 tablespoon of the fat. 
    2. Cut each head of lettuce in half lengthwise. Place lettuce, cut side down, in pan. Cook over high heat about 2 minutes or until lettuce is golden brown. Turn lettuce over; add sherry to pan. Cook 1 minute; remove lettuce from pan and set aside. 
    3. Make sauce by adding vegetable broth, vinegar and mustard to pan. Cook over medium high heat about 8 minutes or until mixture is reduced by half. Add butter; cook until melted. 
    4. Serve Gem halves with a drizzle of sauce, a sprinkle of bacon and parsley. Add salt and pepper to taste.
