1 Tbsp olive oil
1 bag (1 lb) Green Giant™ Fresh Minestrone Soup Blend
1 Tbsp finely chopped Green Giant™ Fresh Sage Leaves
1/4 tsp ground red pepper (cayenne)
1/4 tsp salt
1 1/2 cups fat-free egg product
1/4 tsp pepper
2/3 cup shredded smoked Cheddar cheese or smoked Gruyère cheese
1.Move oven rack to 6” from broiler. Set oven control to broil.
2.In 10” nonstick ovenproof skillet, heat oil over medium-high heat. Add soup blend and sage leaves; cook about 12 minutes, stirring frequently, until crisp-tender and lightly browned. Remove from heat; stir in red pepper and salt.
3.Pat vegetable mixture evenly in skillet; pour egg product on top. Sprinkle with pepper. Broil 3-4 minutes or until set. Sprinkle with cheese; broil 2-3 minutes or until cheese is melted. Cool 5 minutes before serving.
