Asian Noodle Salad

    1 pkg (8 oz) soba noodles
    1/4 cup rice vinegar
    2 Tbsp soy sauce
    2 Tbsp creamy peanut butter
    1 Tbsp hoisin sauce
    1 tsp sesame seed oil
    2 Tbsp packed brown sugar
    3 green onions, chopped
    2 cloves garlic, grated
    1/2 tsp ground ginger
    1 bag Green Giant™ Fresh Asian Vegetable Blend

  • Directions

    1. Make noodles as directed on package. Rinse in cold water; drain. Set aside.
    2. In small bowl, mix vinegar, soy sauce, peanut butter, hoisin sauce, sesame seed oil, brown sugar, green onions, garlic and ginger.
    3. In large bowl, mix noodles and vegetable blend. Pour dressing over mixture; mix well. Refrigerate about 1 hour or until thoroughly chilled.
