Eggplant is an oblong, glossy fruit with a deep purple hue, meaty texture and savory flavor. Both healthy and versatile, eggplant is found in many of the world’s cuisines and can be used as either a side dish or as a main course.
Wash and cut eggplant into cubes and place into a microwave-safe baking dish. Add three tablespoons of butter or oil, cover dish loosely and microwave on high for 7-10 minutes or until fork-tender.
To steam, place washed and cubed or sliced eggplant in steamer for 10-15 minutes or until fork-tender.
Place washed, peeled and cubed eggplant into pot of boiling salted water. Reduce heat and cook uncovered for approximately 10 minutes or until fork-tender.
To freeze eggplant, wash and cut into cubes or slice into discs. Blanch 5 - 8 minutes. Remove from boiling water and immerse in ice water for same amount of time. Dry thoroughly and place into freezer bag.
