The Green Globe cultivar comprises the majority of plants in commercial cultivation. The vegetable that we eat is really the plant's immature flower bud. Buds appear on the new shoots. The size of the bud is determined by the height of the stalk and the bud's position on the stalk. The largest buds grow at the top end. Mediums & Smaller or "babies" grow from side shoots.

Varieties

Green Globe - Mild in taste and smooth in texture, Green Globes are the ideal artichoke to steam, marinade, grill, or roast.

Desert Globe - During the winter harvest, frosted edges may be evident, but don’t let appearances fool you—this will likely increase a nutty flavor of the Desert Globe.

Care & Handling

Availability - Green Giant® Fresh Artichokes are available year round.

Selection - Artichokes should be heavy for their size, compact, and firm with soft green color. During winter, artichokes may exhibit a white blistered or bronze appearance due to frost. This enhances its flavor.

Storage - Refrigerate. Wash artichoke under running water. Pull off lower outer petals. Cut stems to 1 inch or less. Snip off tips of petals. Cook by boiling, steaming, microwaving, or sautéing.

Preparation - Remove the fuzzy center of a cooked and cooled artichoke and fill with a prepared salad such as chicken, tuna, or shrimp for a luncheon entree.

Cooking - Boil, steam, or microwave whole artichokes and serve with your favorite dipping sauce for a flavorful side dish.

Freezing - While a whole artichoke will not freeze well, a blanched artichoke heart will.
